His current research focuses on quantifying the environmental and economic costs of new methods of producing food on a global scale. This includes producing foods from microorganisms (like yeast and bacteria) and growing plants on shelves indoors using artificial light (vertical farming). In doing so, he hopes to guide roadmaps for sustainable food production and identify outstanding bottlenecks for future research.
